200ml recently pressed lemon juice
500g granulated sugar

Ingredients for the Drink (makes 850ml, enough for 10)

200ml clementine cordial (from the recipe above)
Whole cranberries, for garnish

Instructions

To prepare the Citrus Syrup: Put all the ingredients into a pot, heat until it reaches a light boil, stirring to dissolve. After that, take off the heat allowing it to cool down completely. Decant to a sterilised bottle, cap it and store in the refrigerator, it can be stored for around four weeks.

To make Batch Mix: Combine the specified liquids into a sizeable container, let it rest for one hour, then pass it through best through a fine cloth, making it completely strained.

To serve: Measure 85ml from the cocktail base into your mixing glass containing ice, gently stirring carefully for one minute until cold. Filter to a chilled martini glass or similar, decorate with some cranberries and finish with a quick spritz with the mandarin essence over the drink.
